I found Hijacking to be relatively hard. You have a certain amount of time to get into the range of your target vehicle. From there, you need to do enough damage to make it pull over (I found the SMG was a good weapon for this, but ramming it works pretty well too). Then you grab the vehicle and run it back to the shop.
Sounds easy enough, right? Well, it does get a little trickier. It turns out your targets, more often than not, are going to be either rival gang member cars or some sort of public official car (like a SWAT van). And it seems as though they don't like it when you take their stuff, so they are going to come after you in droves as you try to make your way back to the drop-off point.
You have to drive, so you aren't going to be able to spend a lot of time shooting back at them. So my best advice is to just ignore them as much as possible and make a beeline for the shop and hope you get there before your vehicle is destroyed. When possible, you can try to brush off your pursuers into trees or buildings in order to slow them down, but don't make it a priority. Your job is to get that car back to the shop as fast as possible.
